Whereas most companies produce pickles in large tanks containing heavy salt brine, our pickles are fermented outside, in small barrels without vinegar. The fermentation process is slow; the barrels contain a low-salt brine solution that allows the cucumbers to be transformed into pickles over a period of several months.
